In the glass
Tasting notes
Nose
fresh orange zest with ripe raspberry behind it.
Palate
soft and generous, red fruit over a quiet juniper base, cherry building through the middle.
Finish
bright and clean, sweet without being sugary.
The ritual
The perfect serve
Four steps, no shortcuts. The same pour we teach at the tasting bench.
Ice
A big glass, filled properly. This one is meant to be poured on a warm afternoon.
Gin
Thirty millilitres of Orchid Bloom. Lighter in strength, louder in fruit.
Tonic
A clean dry tonic, poured slowly. Let the raspberry come up to meet it.
Cherry
One fresh cherry, or a wide twist of orange. Either way, keep it simple.
The way we pour it at the cellar door.
